I 'd use Time Machine but maybe an even better solution would be to use SuperDuper.
It costs $28 but is a very worthwhile investment for your mac hard disc security.

The problem with using Time Machine is that if you move or rename the original file it will create another copy on the backup drive and waste a lot of space. But if you don't move or rename them that won't happen.
Also, if you delete the file from the computer the Time Machine copy will eventually get dropped as the drive fills.
You can just copy them using Finder.
Depending on how big they are you could maybe fit them on DL DVD disks which hold over 7GB. But they have a limited survival life. I'd just copy them with Finder to an external drive.
Try backup them to an off-site server, like Mozy.
